  • ½ large cucumber peeled and sliced
  • Juice of 1 lime
  • 1 tablespoon honey or agave optional – adjust to taste
  • 1 cup cold water or coconut water
  • A few mint leaves plus extra for garnish

  • Sparkling water optional, for topping up

  • Step 1: Prep Your Ingredients
  • Peel the kiwis and chop them into chunks. Do the same with the cucumber, peel and slice it. If you’re using fresh mint, tear a few leaves for a better release of flavor.
  • Step 2: Blend It All Together
  • In your blender, add the kiwi, cucumber, mint, lime juice, honey (or agave), and water or coconut water. Blend until smooth and light green.
  • Step 3: Strain (Optional)
  • If you want a smoother drink, pour the mixture through a fine mesh strainer into a pitcher or jar. Press with a spoon to get all that goodness out.
  • Step 4: Chill and Serve
  • Let it chill for about 5 minutes or pour it straight over ice in a glass. Add extra mint leaves on top and splash in a bit of sparkling water if you like that fizz.
